All summer long, I have loved our veggies and fruits from our CSA box from Mountain Bounty Farms. This is a very easy pasta recipe which makes great use of the bounty of veggies we’ve received this week.
I start with the onions in olive oil, then add the other veggies: mushrooms, spinach, zucchini, eggplant, and any other spare veggies that would go well with pasta. I add garlic and tomatoes last. Spice with fresh parsley and basil. It’s so easy, even I can do it.
