Foodie Friday: Guest Blog

Grandma GG’s Black Bean and Tomato Spice-iality

Sauté the following:
1 TB olive oil
1 chopped onion
2 jalapeños seeded and chopped
1 cup Italian parsley minced
1 cup cilantro finely minced
1 carrot peeled and thinly sliced

Stir and sauté 5-10 mins
Add 3 large tomatoes quarter – smash with a wooden spoon as they soften and remove skin
Add 3/4 cup hot water and simmer and evaporate off half of water
1 teaspoon chile powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder

Add 2-3 cups black beans and simmer for 20 mins stirring occasionally
Add chopped garlic


Spoon onto rice or quinoa, and top with lettuce, tomato and shredded cheddar cheese. Yum!
